Mexican potato salad
Ingredients/Components
- half and half - 3/4 c
- pepper - 1 tsp
- mayonnaise - 3/4 c
- salt to taste - 1 item
- finely chopped green pepper - 1/2 c
- finely chopped green onion - 1/2 c
- jar pimento - 1 oz
- medium size potatoes, cooked, cooled and cut into medium slices - 5 item
- finely chopped sweet onion - 1/4 c
- grated cheese or sliced cheese - 1 c
How to make mexican potato salad:
Mix onions, pepper, pimento, salt, pepper, mayonnaise and half and half. Grease bottom and sides of a shallow baking dish. Alternate layers; potatoes, filling and cheese. Bake at 375° for 15 minutes. Top with sliced olives if desired. Serve warm.Recipe categories: Lunch/snacks, Salads, Side dish.
