Mexican lasagne
Ingredients/Components
- oil - 2 Tbsp
- egg - 1 item
- chopped onion - 1/4 c
- chili powder - 2 tsp
- shredded Cheddar cheese - 1 c
- Ricotta cheese - 1 (16
- shredded Monterey Jack cheese - 1 c
- jar salsa - 1 oz
- lasagne noodles - 1 pkg
- boned chicken breast, cut into small pieces - 1 lb
How to make mexican lasagne:
Cook noodles, drain, rinse and drain. Arrange in single layer until needed. Lightly brown chicken in hot oil, add onions, cooked until tender and remove from heat. Stir in chili powder, Ricotta and Jack cheese and egg. Spoon 1/4 cup to 1/3 cup mixture on noodle and roll up. Place in greased 9 x 13-inch dish. Pour salsa over roll ups. Cover and bake at 350° for 25 minutes. Uncover and sprinkle with Cheddar cheese. Bake 5 minutes or until cheese melts.
