  • sugar - 2 c
  • cream cheese
  • eggs - 2 item
  • vanilla - 1 tsp
  • flour - 2 c
  • confectioners sugar - 2 c
  • baking soda - 2 tsp
  • can crushed pineapple - 20 oz
  • stick butter - 1 item
  • chopped walnuts - 1 c

How to make mexican fruitcake:

Frosting:8 oz. cream cheese1 tsp. vanilla1 stick butter2 c. confectioners sugar Place pineapple, eggs, sugar and nuts in a blender and blend. Add liquid to dry ingredients and mix thoroughly. Bake in a 9 x 13-inch pan 25 to 35 minutes until golden brown. Cool.

Soften cream cheese and beat all ingredients together, slowly adding confectioners sugar. Garnish with chopped walnuts.
