Ingredients/Components

  • salt - 1/4 tsp
  • oil - 1/2 c
  • buttermilk - 1 c
  • eggs, beaten - 3 item
  • baking soda - 1/2 tsp
  • large onion, chopped - 1 item
  • can cream-style corn - 1 item
  • flour self-rising - 1 c
  • sharp Cheddar cheese, grated - 1 lb
  • large bell pepper, chopped - 1 item
  • cornmeal self-rising - 2 c
  • to 6 jalapeno peppers, chopped - 4 item

How to make mexican cornbread:

Combine first 8 ingredients until dry ingredients are moistened. Add next 3 ingredients. Preheat a 9 x 13-inch oiled baking dish. Pour 1/2 batter into dish and sprinkle with 1/2 of cheese. Pour remaining batter over this and sprinkle remaining cheese on top. Dot with butter or margarine. Bake at 350° for 45 minutes or until done.
