Mexican cornbread
Ingredients/Components
- salt - 1/4 tsp
- oil - 1/2 c
- buttermilk - 1 c
- eggs, beaten - 3 item
- baking soda - 1/2 tsp
- large onion, chopped - 1 item
- can cream-style corn - 1 item
- flour self-rising - 1 c
- sharp Cheddar cheese, grated - 1 lb
- large bell pepper, chopped - 1 item
- cornmeal self-rising - 2 c
- to 6 jalapeno peppers, chopped - 4 item
How to make mexican cornbread:
Combine first 8 ingredients until dry ingredients are moistened. Add next 3 ingredients. Preheat a 9 x 13-inch oiled baking dish. Pour 1/2 batter into dish and sprinkle with 1/2 of cheese. Pour remaining batter over this and sprinkle remaining cheese on top. Dot with butter or margarine. Bake at 350° for 45 minutes or until done.Recipe categories: Breads, Quick breads, North american.
