Ingredients/Components

  • sugar - 3 Tbsp
  • salt - 1 tsp
  • flour - 1 c
  • soda - 1/2 tsp
  • buttermilk - 1 c
  • baking powder - 1 tsp
  • egg, beaten - 1 item
  • cornmeal - 1 c
  • grated cheese - 1/2 lb
  • corn oil - 4 Tbsp
  • can whole kernel corn - 1 item
  • small can chopped green chilies - 1 item
  • can pimentos - 1 item

How to make mexican cornbread:

Combine cornmeal and buttermilk; let stand 30 minutes. Mix remainder of ingredients while you wait. Sift flour, sugar, salt and soda into bowl; add egg and milk. Add chilies, pimentos, corn and cheese. Mix well. Bake in well-greased pan at 375° for 30 minutes.
