Mexican cornbread
Ingredients/Components
- sugar - 3 Tbsp
- salt - 1 tsp
- flour - 1 c
- soda - 1/2 tsp
- buttermilk - 1 c
- baking powder - 1 tsp
- egg, beaten - 1 item
- cornmeal - 1 c
- grated cheese - 1/2 lb
- corn oil - 4 Tbsp
- can whole kernel corn - 1 item
- small can chopped green chilies - 1 item
- can pimentos - 1 item
How to make mexican cornbread:
Combine cornmeal and buttermilk; let stand 30 minutes. Mix remainder of ingredients while you wait. Sift flour, sugar, salt and soda into bowl; add egg and milk. Add chilies, pimentos, corn and cheese. Mix well. Bake in well-greased pan at 375° for 30 minutes.Recipe categories: Breads, Quick breads, North american.
