Mexican cornbread
Ingredients/Components
- eggs - 2 item
- milk - 1 c
- salt - 1/2 tsp
- soda - 1/2 tsp
- plus 2 Tbsp - 1 c
- ground beef - 1/2 lb
- medium onion - 1 item
- can cream-style corn - 1 oz
- bacon grease - 1/4 c
- sausage - 1/4 lb
- shredded sharp cheese - 2 c
- chopped jalapeno pepper - 1 Tbsp
How to make mexican cornbread:
Combine 1 cup meal, salt and soda; mix in bowl. Add eggs, milk, corn and bacon grease. Stir until smooth; set aside. Saute beef and sausage; drain. Sprinkle 1 tablespoon cornmeal in greased skillet and heat. Pour half of batter in the skillet; sprinkle with cheese, ground beef, sausage and onion, then pepper. Pour remaining batter over mixture. Bake at 350° for 45 to 50 minutes. Let stand in skillet about 10 minutes.Recipe categories: Breads, Quick breads, North american.
