Mexican cornbread
Ingredients/Components
- sour cream - 1 c
- oil - 1/2 c
- baking powder - 1 tsp
- grated Cheddar cheese - 4 oz
- onion, chopped - 1 item
- self-rising corn meal
- small can creamed corn - 1 item
- eggs or equivalent - 2 item
- can jalapeno pepper, finely chopped - 1 item
How to make mexican cornbread:
Mix all ingredients except cheese. Pour 1/2 batter into well oiled hot iron skillet or 9 x 9-inch pan. Sprinkle on cheese. Add remaining batter and spread evenly. Bake at 350° for 45 minutes.Recipe categories: Breads, Quick breads, North american.
