Ingredients/Components
- sugar - 1/2 c
- eggs - 2 item
- oil - 1/2 c
- buttermilk - 3/4 c
- self-rising flour - 1/2 c
- sharp cheese - 1/3 c
- cream-style corn - 1 c
- self-rising cornmeal
- medium size onion, chopped - 1 item
- to 3 jalapeno peppers, chopped - 2 item
How to make mexican cornbread:
In mixing bowl, add cornmeal, flour, sugar and cheese. Put into blender corn, eggs, jalapeno peppers, oil and onion; chop well. Add this to first 4 ingredients and mix well. Add buttermilk and blend well. Pour in muffin pans and cook in 350° oven. Makes 24 muffins.Recipe categories: Breads, Quick breads, North american.
