  • eggs - 2 item
  • oil - 1/2 c
  • buttermilk - 1 c
  • chopped onions - 1/2 c
  • can cream-style corn - 1 lb
  • Cheddar cheese, grated - 1 c
  • chopped bell pepper - 1/2 c
  • self-rising cornmeal - 1 c
  • to 5 jalapeno peppers, chopped fine - 4 item

How to make mexican cornbread:

Mix first 9 ingredients in the order listed. Preheat 2 tablespoons oil in heavy iron skillet in 400° oven until very hot. Pour batter into skillet. Turn oven to 375° and cook until golden brown.
