Ingredients/Components

  • oil - 1/4 c
  • self-rising flour - 1 c
  • eggs, well beaten - 2 item
  • small onion, chopped - 1 item
  • whole milk - 1 c
  • sharp cheese, grated - 1 c
  • cream-style corn - 1 c
  • jalapeno peppers, chopped - 1/4 c

How to make mexican cornbread:

Mix all ingredients except 1/2 of the cheese. Sprinkle this 1/2 on top of the batter. Bake at 400° until done (about 20 to 25 minutes) in a well-greased 8-inch pan or a 12 large muffin pan.
