Ingredients/Components

  • sour cream - 1 c
  • salt - 1/2 tsp
  • soda - 1/2 tsp
  • eggs, beaten - 2 item
  • Cheddar cheese, shredded - 1 c
  • shortening, melted - 1/3 c
  • 1 can cream corn - 8 oz
  • cornmeal, yellow - 1 c
  • 1 can green chiles, chopped drained - 4 oz

How to make mexican cornbread:

Blend together cornmeal, salt and soda. Stir in shortening. Add sour cream, corn and eggs. Mix well. Stir in green chiles and cheeses. Pour into a greased 9x13-inch pan.

Bake at 375° for 35 to 40 minutes.
