Ingredients/Components
- sugar - 1 tsp
- butter or margarine - 1 Tbsp
- salt - 1 tsp
- pepper - 1/8 tsp
- chopped onion - 3 Tbsp
- chopped celery - 3 Tbsp
- chopped green pepper - 3 Tbsp
- whole kernel corn, drained - 2 c
- cooked tomatoes - 2 c
- slices bacon, cut into small pieces - 2 item
How to make mexican corn casserole:
Cook bacon until crisp. Cook onions, celery and peppers in butter until tender. Mix all ingredients together and pour into a greased casserole dish. Bake in moderate oven at 350° for 30 to 40 minutes.Recipe categories: Egg, Side dish, Casseroles.
