Ingredients/Components

  • sugar - 1 tsp
  • butter or margarine - 1 Tbsp
  • salt - 1 tsp
  • pepper - 1/8 tsp
  • chopped onion - 3 Tbsp
  • chopped celery - 3 Tbsp
  • chopped green pepper - 3 Tbsp
  • whole kernel corn, drained - 2 c
  • cooked tomatoes - 2 c
  • slices bacon, cut into small pieces - 2 item

How to make mexican corn casserole:

Cook bacon until crisp. Cook onions, celery and peppers in butter until tender. Mix all ingredients together and pour into a greased casserole dish. Bake in moderate oven at 350° for 30 to 40 minutes.
