  • salt - 1 tsp
  • oil - 1/2 c
  • soda - 1/2 tsp
  • slightly beaten eggs - 2 item
  • creamed corn - 6 8
  • or 3 jalapeno peppers - 2 item
  • finely chopped medium onion - 1 item
  • self-rising corn meal mix - 1 c
  • shredded mild Cheddar - 8 oz

How to make mexican corn bread:

Preheat oven to 400°. Mix all ingredients together except corn meal. When well mixed, add corn meal. Pour into greased cast-iron skillet. Bake 30 to 35 minutes.
