Ingredients/Components
- milk - 1 c
- salt - 1 tsp
- oil - 1/2 c
- soda - 1/2 tsp
- slightly beaten eggs - 2 item
- creamed corn - 6 8
- or 3 jalapeno peppers - 2 item
- finely chopped medium onion - 1 item
- self-rising corn meal mix - 1 c
- shredded mild Cheddar - 8 oz
How to make mexican corn bread:
Preheat oven to 400°. Mix all ingredients together except corn meal. When well mixed, add corn meal. Pour into greased cast-iron skillet. Bake 30 to 35 minutes.Recipe categories: < 4 hours, Breads, Mexican.
