Mexican corn bread
Ingredients/Components
- milk - 1 c
- salt - 3/4 tsp
- eggs, beaten - 2 item
- baking soda - 1/2 tsp
- cooking oil - 1/2 c
- cornmeal - 1 c
- hamburger
- onion, diced - 1 item
- can creamed corn - 1 item
- dried red pepper flakes to taste or 2 to 3 jalapeno peppers to taste take out seeds and chop fine - 1 to
- grated mild or sharp Cheddar cheese - 1/2 1
How to make mexican corn bread:
Mix cornmeal, eggs, milk, baking soda, salt, cooking oil and creamed corn together; set aside. Brown the following: hamburger, onion and dried red pepper flakes or jalapeno peppers. Take off heat and add Cheddar cheese.In large casserole dish, put one-half of cornmeal mixture, next layer with all the meat mixture, then top with remaining cornmeal mixture. Sprinkle with some grated cheese. Bake uncovered at 350° for approximately 1 hour.
