Mexican corn bread
Ingredients/Components
- eggs - 2 item
- milk - 2 c
- salt - 1 tsp
- baking soda - 1 tsp
- ground beef - 1 lb
- shredded Cheddar cheese - 2 c
- onion, chopped - 1 item
- can cream-style corn - 1 item
- bell pepper, chopped - 1 item
- self-rising corn meal - 2 c
- to 2 jalapeno peppers, chopped - 1 item
How to make mexican corn bread:
Mix first 6 ingredients together well. Brown ground beef in a skillet. Drain. In iron skillet, layer bottom with 1/2 of corn meal mixture. Top with ground beef, onion and bell pepper. Add jalapeno peppers, and top with shredded cheese. Add remaining corn meal mixture and bake at 375° for 55 minutes.Recipe categories: < 4 hours, Breads, Mexican.
