Ingredients/Components

  • eggs - 2 item
  • milk - 2 c
  • salt - 1 tsp
  • baking soda - 1 tsp
  • ground beef - 1 lb
  • shredded Cheddar cheese - 2 c
  • onion, chopped - 1 item
  • can cream-style corn - 1 item
  • bell pepper, chopped - 1 item
  • self-rising corn meal - 2 c
  • to 2 jalapeno peppers, chopped - 1 item

How to make mexican corn bread:

Mix first 6 ingredients together well. Brown ground beef in a skillet. Drain. In iron skillet, layer bottom with 1/2 of corn meal mixture. Top with ground beef, onion and bell pepper. Add jalapeno peppers, and top with shredded cheese. Add remaining corn meal mixture and bake at 375° for 55 minutes.
