Mexican corn bread
Ingredients/Components
- milk - 1 c
- salt - 3/4 tsp
- soda - 1/2 tsp
- eggs, well beaten - 2 item
- grated cheese - 1/2 lb
- ground beef - 1 lb
- large onion, chopped - 1 item
- can cream-style corn - 1 item
- yellow corn meal - 1 c
- jalapenos, chopped optional - 4 item
- barely bacon grease - 1/2 c
How to make mexican corn bread:
Brown ground beef; drain. Have ready: onion, cheese and jalapenos. Mix first 7 ingredients and set aside.Grease iron skillet. Sprinkle with thin layer of meal; brown. Pour 1/2 of the batter in skillet. Sprinkle cheese over batter Add the meat, onions and peppers. Pour the remaining batter on top. Bake at 350° for 45 to 50 minutes.
