Mexican corn bread
Ingredients/Components
- milk - 1 c
- salt - 1 tsp
- oil - 1 Tbsp
- eggs, beaten - 2 item
- self-rising flour
- pepper - 1/2 tsp
- grated cheese - 1/2 c
- ground beef - 1 lb
- onion, chopped - 1 item
- green pepper, chopped - 1/2 item
- bacon drippings - 1/3 c
- pod hot pepper if desired - 1 item
- can creamed or Niblets corn - 1 item
How to make mexican corn bread:
Combine ground beef, oil, peppers, onion, salt and pepper; cook until brown and set aside. Mix remaining ingredients and pour 1/2 of mixture into greased pan. Layer meat mixture and 1/2 cup grated cheese. Add remaining corn bread mixture. Bake for 40 to 45 minutes at 350°. Cool and cut into squares.Recipe categories: < 4 hours, Breads, Mexican.
