Ingredients/Components
- egg - 1 item
- small can cream-style corn - 1 item
- vegetable oil - 1/3 c
- cottage cheese - 1/4 c
- salt - 1/2 tsp
- corn meal - 1/4 c
- white flour - 1/2 c
- baking powder
- small can green chiles - 1 item
- grated Longhorn cheese - 1/2 c
How to make mexican corn bread:
Beat egg in mixing bowl. Add corn, cottage cheese and oil. Mix well. Add dry ingredients. If too dry, add a little milk. Spread half of the batter into greased pan. Add layer of green chile strips and cheese, then add rest of batter. Bake at 375° forRecipe categories: < 4 hours, Breads, Mexican.
