Mexican corn bread


Ingredients/Components
- sugar - 1/2 c
- flour - 1 c
- oil - 1/2 c
- egg - 1 item
- cottage cheese - 1 c
- grated Cheddar cheese - 1/2 lb
- can creamed corn - 1 item
- corn meal - 1 c
- small can diced green chilies - 1 item
How to make mexican corn bread:
Mix together corn meal, flour, oil, egg, sugar, corn and cottage cheese. Place half of mixture into pan. Sprinkle with half of the Cheddar cheese. Spread on the chilies. Cover with the rest of mixture and sprinkle the rest of cheese on top.Bake at 400° for 35 to 40 minutes. Let stand 15 minutes before cutting.
