Mexican corn bread
Ingredients/Components
- corn meal - 1 c
- buttermilk - 1 c
- eggs - 2 item
- bacon drippings - 1/4 c
- soda - 3/4 tsp
- salt optional - 1/2 tsp
- medium onion, chopped - 1 item
- 1/2 jalapeno peppers optional - 1 item
- can cream-style corn 3/4 is better - 1/2 item
- grated cheese 3/4 is better - 1/2 lb
How to make mexican corn bread:
Mix all, except cheese. Pour 1/2 in large iron skillet that has been greased and heated. Sprinkle 1/2 cheese over it, then add rest of batter. Sprinkle rest of cheese on top. Bake as corn bread in a 400° oven until brown.Recipe categories: < 4 hours, Breads, Mexican.
