  • chili powder - 2 tsp
  • mayonnaise - 1 c
  • grated Cheddar cheese - 1 c
  • salt and freshly ground black pepper to taste - 1 item
  • ground cumin - 2 tsp
  • clove garlic, crushed - 1 item
  • juice of 1 lime
  • sweet red pepper, diced - 1 item
  • sliced scallions - 4 item
  • avocado slices - 1 item
  • minced jalapeno pepper - 1 item
  • ribs minced celery - 2 item
  • whole boneless chicken breasts, poached, skinned and cut into 1/4-inch strips - 4 item

How to make mexican chicken salad:

Place chicken, celery, scallions, jalapeno pepper, red pepper, garlic and cheese in a mixing bowl and toss to combine.

Mix mayonnaise, lime juice, cumin and chili powder in a small bowl. Gently fold mayonnaise mixture into chicken mixture, adding more mayonnaise if needed to blend the salad well. Season to taste with salt and pepper. Transfer to serving bowl. Refrigerate several hours to allow flavors to blend. Garnish with avocado slices. Serves 6 to 8.
