Mexican chicken pasta salad
Ingredients/Components
- dairy sour cream - 1/4 c
- ground red pepper - 1/8 tsp
- shredded Cheddar or Monterey Jack cheese - 1/2 c
- Suddenly Salad Italian pasta - 1 pkg
- can chunk chicken, drained or about 1 c - 1 3/4
- tortilla chips - 1 item
- medium tomato, seeded and chopped - 1 item
- guacamole for garnish - 1 item
- sliced ripe olives for garnish - 1 item
How to make mexican chicken pasta salad:
Prepare salad as directed on package except omit oil from dressing and mix in sour cream and red pepper. Stir in chicken. Line serving plate with tortilla chips. Mound salad onto chips; top with tomato and cheese. Garnish with guacamole and sliced ripe olives, if desired. Serves 4.Recipe categories: Salads, Main dish, One Dish meal.
