  • can cream of chicken soup - 1 item
  • can Ro-Tel tomatoes - 1 item
  • can cream of mushroom soup - 1 item
  • medium chopped onion - 1 item
  • can Cheddar cheese soup - 1 item
  • large fryer - 1 item
  • processed cheese - 1/2 lb
  • bag taco chips nacho cheese, crushed - 1 item

How to make mexican chicken casserole:

Boil and debone chicken and cut in chunks. Cut cheese in chunks. Place chicken in a 13 x 9-inch casserole dish and top with chopped onion, salt and pepper. Add cheese chunks and top with half the bag of taco chips. Mix soups and tomatoes in a bowl and pour over chicken. Bake at 350° for 30 minutes, then sprinkle remainder of chips on top. Bake an additional 5 to 10 minutes.
