  • can cream of chicken soup - 1 item
  • can cream of mushroom soup - 1 item
  • grated Cheddar cheese - 1 lb
  • whole chicken breasts, boiled until tender - 3 item
  • small green onion, chopped - 1 item
  • can ripe sliced olives - 1 oz
  • corn tortillas, cut in bite size pieces and soaked in 2/3 c - 1 doz
  • can chopped Ortega chili peppers - 1 oz

How to make mexican chicken casserole:

Bone chicken and cut int bite size pieces. Mix all ingredients except tortillas and save some cheese for top. Put in baking dish in layers with tortillas. Top with grated cheese. Bake at 350° for 30 to 45 minutes.

(I add about 3/4 cup milk when mixing ingredients as it makes it creamier.)
