Ingredients/Components
- grated Cheddar cheese
- hot sauce - 1/8 1/4
- can chopped green chilies - 1 oz
- can jalapenos - 1 1/4
- chopped olives optional - 1 item
- cans chunk white chicken or 2 c - 2 1/2
- Vigo Mexican rice - 2 pkg
How to make mexican chicken and rice:
Cook rice per package directions. After rice has cooked, mix with other ingredients, reserving 1/2 cup cheese. Spoon into a 2 1/2-quart buttered casserole. Top with grated cheese. Bake, uncovered, at 350° for 30 minutes.Recipe categories: < 60 mins, North american, Mexican.
