Ingredients/Components

  • oil - 1 Tbsp
  • chicken broth - 1 c
  • shredded Cheddar cheese - 1/2 c
  • small onion, chopped - 1 item
  • mild salsa - 1 c
  • small green pepper, chopped - 1 item
  • boneless chicken - 1 lb
  • frozen sweet corn - 1 pkg
  • Minute instant rice

How to make mexican chicken and rice:

Heat oil in large skillet on medium high heat. Add chicken, onion and pepper. Cook and stir until chicken is cooked through. Add corn, broth and salsa; bring to boil. Stir in rice and cover. Remove from heat. Let stand 5 minutes. Fluff with a fork. Sprinkle with cheese. Let stand 2 minutes. Serve.
