Mexican chicken and rice
Ingredients/Components
- oil - 1 Tbsp
- chicken broth - 1 c
- shredded Cheddar cheese - 1/2 c
- small onion, chopped - 1 item
- mild salsa - 1 c
- small green pepper, chopped - 1 item
- boneless chicken - 1 lb
- frozen sweet corn - 1 pkg
- Minute instant rice
How to make mexican chicken and rice:
Heat oil in large skillet on medium high heat. Add chicken, onion and pepper. Cook and stir until chicken is cooked through. Add corn, broth and salsa; bring to boil. Stir in rice and cover. Remove from heat. Let stand 5 minutes. Fluff with a fork. Sprinkle with cheese. Let stand 2 minutes. Serve.Recipe categories: < 60 mins, North american, Mexican.
