Mexican chicken and rice



  • oil - 1 Tbsp
  • chicken broth - 1 c
  • mild salsa - 1 c
  • cheddar cheese, shredded - 1/2 c
  • frozen corn, thawed - 1 pkg
  • Minute Rice
  • chicken, cubed - 1 lb
  • each, small onion and sweet pepper, chopped - 1 item

How to make mexican chicken and rice:

Heat oil in skillet, add onion, pepper and chicken. Cook until chicken is tender, stirring often. Add corn, broth and salsa; bring to a boil. Stir in rice and cover. Remove from heat. Let stand 5 minutes or until liquid is absorbed. Fluff with fork. Pour into serving dish, sprinkle with cheese and let stand 2 minutes or until cheese is melted.
