Mexican chicken and rice
Ingredients/Components
- oil - 1 Tbsp
- chicken broth - 1 c
- onion, chopped - 1 item
- green pepper, chopped - 1 item
- shredded cheese - 1/2 c
- mild salsa - 1 c
- frozen corn, thawed - 1 pkg
- boneless chicken breast, cubed - 1 lb
- Minute instant rice
How to make mexican chicken and rice:
Heat oil on medium-high heat. Add chicken, onion and pepper. Cook and stir until chicken is done. Add corn, chicken broth and salsa. Bring to a boil. Stir in rice. Cover. Remove from heat. Let stand 5 minutes. Fluff with a fork. Sprinkle with cheese and cover. Let stand for 2 minutes.Recipe categories: < 60 mins, North american, Mexican.
