Mexican chicken and rice
Ingredients/Components
- pkg - 1 oz
- oil - 1 Tbsp
- chicken broth - 1 c
- 2 oz - 1/2 c
- small onion, chopped - 1 item
- green pepper, chopped - 1 item
- mild salsa - 1 c
- boneless, skinless chicken breasts, cubed - 1 lb
- Minute original instant rice
How to make mexican chicken and rice:
Heat oil in large skillet on medium-high heat. Add chicken, onion and pepper. Cook and stir until chicken is cooked through. Add corn, broth and salsa. Bring to a boil. Stir in rice and cover. Remove from heat. Let stand 5 minutes. Fluff with fork. Sprinkle with cheese and cover. Makes 4 servings. Preparation time is 25 minutes.Recipe categories: < 60 mins, North american, Mexican.
