- 2 oz - 1/2 c
- mild salsa - 1 c
- boneless, skinless chicken breasts, cubed - 1 lb
- Minute original instant rice
- each: small onion and green pepper, chopped - 1 item
How to make mexican chicken and rice:
Heat oil in large skillet on medium-high heat. Add chicken, onion and pepper; cook and stir until chicken is cooked thoroughly. Add corn, broth and salsa; bring to boil. Stir in rice and cover.
