- boneless chicken breast - 1 lb
- small onion, chopped - 1 item
- small green pepper, chopped - 1 item
- pkg - 1 oz
- chicken broth - 1 c
- mild salsa - 1 c
- instant rice
- shredded Cheddar cheese - 1/2 c
How to make mexican chicken and rice:
Heat oil in large skillet on medium heat. Add chicken, onion and pepper; cook and stir until chicken is cooked through. Add corn, broth and salsa; bring to boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes; fluff with fork. Sprinkle with cheese. Let stand until cheese melts.Recipe categories: < 60 mins, North american, Mexican.
