Ingredients/Components
- oil - 1 Tbsp
- chicken broth - 1 c
- small onion, chopped - 1 item
- Minute rice
- green pepper, chopped - 1 item
- Cheddar cheese - 1/2 c
- medium salsa - 1 c
- boneless, skinless chicken - 1 lb
- frozen sweet corn - 1 pkg
How to make mexican chicken:
Heat oil. Add chicken, onion and pepper. Cook and stir until chicken is cooked clear through. Add corn, broth and 1 cup medium salsa. Bring to a boil. Stir in rice.
