  • oil - 1 Tbsp
  • chicken broth - 1 c
  • small onion, chopped - 1 item
  • Minute rice
  • green pepper, chopped - 1 item
  • Cheddar cheese - 1/2 c
  • medium salsa - 1 c
  • boneless, skinless chicken - 1 lb
  • frozen sweet corn - 1 pkg

How to make mexican chicken:

Heat oil. Add chicken, onion and pepper. Cook and stir until chicken is cooked clear through. Add corn, broth and 1 cup medium salsa. Bring to a boil. Stir in rice. Cover and remove from heat when comes to a boil again. Let stand 5 minutes. Fluff
