Ingredients/Components

  • can cream of chicken soup - 1 item
  • can Ro-Tel tomatoes - 1 item
  • can cream of mushroom soup - 1 item
  • hamburger
  • onion, chopped - 1 item
  • bell pepper, chopped - 1 item
  • bag tortilla chips - 1 item
  • small box Velveeta cheese - 1 item

How to make mexican casserole:

Cook hamburger, onion and bell pepper in a skillet until brown. Mix cream of chicken soup, cream of mushroom soup, Ro-Tel tomatoes and Velveeta cheese in a pan until cheese is melted. Combine the meat mixture and the cheese mixture. Pour over tortilla chips in a 9 x 13-inch pan. Layer chips, then mixture, topping off with chips. Bake in oven at 350° for 30 minutes or until brown.
