Ingredients/Components

  • sour cream - 1 item
  • salt - 1 tsp
  • pepper - 1/4 tsp
  • can cream of chicken soup - 1 item
  • can cream of mushroom soup - 1 item
  • lean ground beef - 2 lb
  • medium onion, chopped - 1 item
  • large can evaporated milk - 1 item
  • Velveeta cheese Mexican style, cut into 2-inch cubes - 1 (1
  • refrigerated corn tortillas white corn is best - 1 pkg
  • can enchilada sauce mild or medium - 1 item

How to make mexican casserole:

Brown meat and onion in large pot or Dutch oven. Drain meat mixture if necessary. Add remaining ingredients, except tortillas, to meat mixture and heat until cheese melts. Cut tortillas in quarters.

Spray a 9 x 13-inch pan with Pam. Layer tortilla quarters with meat mixture, starting with tortillas on bottom and ending up with meat mixture on top. Bake at 350°. Serve with sour cream.

Note: This is a great make ahead dish. Just cover and refrigerate. Increase baking time by 10 minutes.
