Ingredients/Components

  • cinnamon - 1/4 tsp
  • salt
  • flour - 3 Tbsp
  • vegetable oil
  • chopped onion - 1/2 c
  • chili powder
  • chopped green pepper - 3/4 c
  • ground beef
  • cans tomato sauce - 3 oz
  • slices American cheese - 3 item
  • ground cumin - 1/2 tsp
  • eggs, slightly beaten - 2 item
  • green beans - 1 to
  • dashes pepper - 2 item

How to make mexican bean casserole:

Heat oven to 400°. In a bowl, mix beef, eggs, salt and pepper. Shape into 1-inch balls (coat with flour). In a large skillet, over moderately high heat, heat oil and brown pepper and onion slightly. Remove with slotted spoon. In same skillet, brown floured meat balls. Drain off excess fat.

Combine, in skillet, browned meat balls, pepper and onion, tomato sauce and spices. Heat 2 to 3 minutes to blend flavors; add salt, if necessary. Remove from heat, mix well with beans and turn into ungreased, deep, 2-quart casserole. Bake 15 to 20 minutes or until bubbling hot. Arrange cheese along edges of casserole and bake 2 to 3 minutes longer.

Rather than frying the meat balls, I just shape them, place them in a baking dish and bake about 30 minutes at 350° (or until done) and I use olive oil instead of vegetable oil.
