Meringue cookies



  • sugar - 1 c
  • vanilla - 1 tsp
  • flour - 2 Tbsp
  • egg whites - 3 item
  • pecans - 2 c
  • dates - 1 pkg
  • coconut optional - 1 c

How to make meringue cookies:

Beat egg whites stiff; add sugar. Fold in the floured dates, nuts, vanilla and coconut (if using it). Drop on cookie sheet covered with wax paper, using a teaspoon. Bake at 325° until delicately browned. The coconut makes the cookie quite moist and it adds flavor, but it is not necessary to make a good cookie.
