  • sugar - 1 c
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour
  • egg yolks - 2 item
  • baking powder - 1 tsp
  • shortening - 1/2 c
  • blueberries - 1/3 c

How to make melt in your mouth blueberry cake:

Grease and flour an 8-inch square pan. Heat oven to 350°.

Sift together flour, baking powder and salt. Cream the shortening with sugar. Beat in egg yolks and vanilla. Add flour mixture alternately with milk. Fold in blueberries. Spread in pan; sprinkle lightly with about a tablespoon of sugar.

Bake 35 to 45 minutes or until cake tests done (a toothpick inserted in the center will come out free of batter). Cool on wire rack. Cut into squares.
