Mediterranean shrimp
Ingredients/Components
- can chicken broth - 1/2 item
- medium shrimp, peeled and deveined
- oregano - 2 Tbsp
- juice of 1 lemon
- medium onion, chopped - 1 item
- bunch green onions, chopped - 1 item
- crumbled Feta cheese - 1/4 c
- celery stalks, chopped - 3 item
- cooked thin spaghetti - 2 c
- olive oil or Pam olive oil spray - 1 Tbsp
- medium garlic cloves, chopped - 2 item
- medium tomato, quartered - 1 item
How to make mediterranean shrimp:
Add olive oil or olive oil spray to large saucepan. Over medium heat, saut onions, garlic and celery until onion is translucent. Add chicken broth for more liquid. Add oregano; cook for 10 minutes. Add tomato, shrimp and cooked spaghetti. Mix until all shrimp and spaghetti is covered with vegetable mixture. Cook for 5 minutes. Serves 2.Serve on two plates; sprinkle with 2 tablespoons crumbled Feta cheese, then generously squeeze lemon juice on top. Serve immediately.
On Weight Watchers, each serving is 7 points if Pam is used instead of oil.
