  • oil - 1 Tbsp
  • minced garlic - 1 tsp
  • sliced mushrooms - 4 oz
  • onion, sliced - 1 item
  • chicken stock - 8 oz
  • apple juice - 5 oz
  • sliced black olives - 4 oz
  • jar sun-dried tomatoes in oil - 1 oz
  • fresh rosemary - 1 item
  • boneless chicken breasts, cooked and cubed - 4 item
  • curried fruit chutney - 2 3

How to make mediterranean chicken stew:

Soften onion in oil. Stir in garlic, mushrooms, roughly chopped tomatoes, olives, stock, juice, chutney, rosemary and bring to a boil. Simmer a few minutes. Add chicken and simmer again until chicken is thoroughly heated. Add more stock, if necessary. Serve with pasta, rice or couscous.
