Ingredients/Components

  • egg - 1 item
  • Ricotta - 1 c
  • garlic powder - 2 3
  • chopped onion
  • Parmesan cheese - 1/4 c
  • parsley flakes - 1/4 c
  • oregano - 2 tsp
  • basil - 1 tsp
  • can tomato paste - 1 oz
  • shredded Mozzarella cheese - 8 oz
  • sliced mushrooms - 1/2 lb
  • creamed cottage cheese
  • can diced tomatoes undrained - 1 oz
  • whole wheat lasagna noodles - 8 oz

How to make meatless lasagna:

Tomato Sauce:1/2 c. chopped onion2 to 3 tsp. garlic powder1 (29 oz.) can diced tomatoes (undrained)1 (6 oz.) can tomato paste1/4 c. parsley flakes2 tsp. oregano1 tsp. basil Cheese Layers:1 c. creamed cottage cheese1 c. Ricotta1 egg1/2 lb. sliced mushrooms8 oz. shredded Mozzarella cheese1/4 c. Parmesan cheese Cook noodles according to package directions; drain.

Tomato Sauce: Combine ingredients in small pan; cook over medium heat for 15 to 20 minutes.

Cheese Layers: While sauce cooks, thoroughly combine the cottage cheese, dry Ricotta, egg and sliced mushrooms in bowl.

In greased or sprayed 13 x 9-inch pan, alternately layer sauce, noodles, cottage cheese mixture and Mozzarella cheese, beginning and ending with sauce. Sprinkle top with Parmesan cheese. Bake at 375° for 35 to 45 minutes. Let stand 10 to 15 minutes before cutting.
