Ingredients/Components

  • pkg - 1/2 lb
  • margarine or butter - 3 Tbsp
  • chopped onion - 1/2 c
  • chopped celery - 1/2 c
  • can tomatoes, cut up and undrained - 1 oz
  • can tomato paste - 1 oz
  • water - 1/2 c
  • 1/2 lb - 2 c
  • basil leaves - 1/2 Tbsp
  • sugar - 1/2 tsp
  • salt - 1/2 tsp
  • pepper - 1/4 tsp
  • can mixed vegetables, drained - 1 oz

How to make meatless lasagna:

Prepare lasagna according to package directions; drain. In large saucepan, melt margarine. Add onion and celery; cook until tender. Stir in tomatoes, tomato paste, water, basil, sugar, salt and pepper. Bring to a boil. Reduce heat; simmer 15 minutes.

In greased 13 x 9-inch baking pan, layer 1/3 each lasagna, vegetables, sauce and cheese. Repeat layers. Bake in a 350° oven until hot and bubbly, 30 to 40 minutes. Let stand 10 minutes before cutting. Refrigerate or freeze leftovers. Makes 8 to 10 servings.
