Ingredients/Components

  • salt - 1 tsp
  • oil - 2 Tbsp
  • egg, beaten - 1 item
  • soft bread crumbs - 1 c
  • minced fresh parsley - 1/4 c
  • ground beef
  • finely chopped onion - 1/4 c
  • thyme - 1/2 tsp
  • cans beef broth - 2 1/2
  • margoram - 1 tsp
  • cans condensed mushroom or cream of celery soup - 2 item
  • medium potatoes; peeled and quartered - 4 item
  • medium carrots; cut into chunks - 4 item
  • jar whole pearl onions; drained

How to make meatball stew:

In a bowl, combine first 6 ingredients. Add beef and mix well. Shape into 48 meatballs. In a dutch oven; brown meatballs in oil; drain. Add broth, soup potatoes, carrots and pearl onions; bring to a boil. Reduce heat; simmer for 30 minutes or until vegetables are tender. Sprinkle with parsley. Serves 8.
