  • eggs - 2 item
  • milk - 1/2 1
  • salt
  • water - 1/2 1
  • pepper - 1/2 tsp
  • Parmesan cheese - 1 c
  • fine dry bread crumbs - 2 c
  • ground beef - 4 lb
  • cloves garlic - 2 item
  • parsley - 2 Tbsp
  • large onion, diced - 1 item
  • cans tomato soup - 4 item
  • bags mixed vegetables - 2 or
  • vegetable water - 6 bouillon
  • cans beef noodle soup - 4 item

How to make meatball soup:

In large cooking pot, prepare mixed vegetables. When tender, drain and set aside the cooking water from vegetables. To vegetables add noodle soup, tomato soup and beef bouillon dissolved in vegetable water. Add meatballs as they brown. After browning meatballs, pour off fat. Add 1/2 to 1 cup water to pan and scrape meat pieces. Add to soup. More vegetable water can be added, depending on how thick you like it. Freeze leftovers.
