Ingredients/Components
- salt - 1 tsp
- egg - 1 item
- pepper - 1/4 tsp
- soy sauce - 2 3
- bay leaf - 1 item
- basil - 1 tsp
- carrots - 1 c
- lean ground beef - 1 lb
- green onions - 10 item
- rice - 1/2 c
- celery - 1 c
- beef broth - 4 c
- tomatoes - 2 item
- cabbage or 1/2 small head cabbage - 1 lb
How to make meatball soup:
In large pot, heat broth to simmer. Meanwhile, mix beef, eggs, salt and pepper. Shape into meatballs and drop into broth. Cut up onions, slice celery and carrots, shred cabbage and cut tomatoes in eights.Add celery, carrots, cabbage, tomatoes, rice, bay leaf and basil. Cover and simmer about 40 minutes. Stir occasionally. Discard bay leaf. Stir in soy sauce. Makes about 6 servings.
