Ingredients/Components

  • salt
  • brown sugar - 2 Tbsp
  • vinegar - 2 Tbsp
  • ginger - 1/2 tsp
  • allspice - 1/2 tsp
  • pepper - 1/2 tsp
  • chopped onions - 2 c
  • ground beef - 5 lb
  • oregano - 1 Tbsp
  • tomato juice - 1 pt
  • minced parsley - 2 Tbsp
  • chopped green peppers 2 medium - 1 c
  • 5 pt - 9 c
  • cans 2 2/3 c - 4 oz

How to make meat sauce:

Brown ground beef and onions. Add green peppers and cook slowly until tender. Add remaining ingredients. Simmer until thick enough for serving. Skim off excess fat before canning. Pour hot into jars, leaving 1-inch head space. Adjust caps. Process pints 1 hour and quarts for 1 hour and 15 minutes at 10 pounds pressure.

These are the changes I make in the recipe for freezing.

I cook onions, beef and green pepper together until done and drain most of the fat off or all of it. I do not put tomato juice in unless it is too thick.

I put about 2 cups of mixture in a Hefty freezer bag. Put on a cookie sheet until frozen.
