Mashed potato casserole
Ingredients/Components
- milk - 1/4 C
- garlic powder - 1/4 tsp
- minced parsley - 1 Tbsp
- light cream cheese - 8 oz
- potatoes, peeled and cubed - 6 med
- low fat sour cream - 1 C
- shredded low fat sharp cheddar cheese - 1/2 C
How to make mashed potato casserole:
Cook potatoes in boiling water until tender; drain. Heat oven to 325 degrees. Coat 8 x 12-inch baking dish with cooking spray.Combine cooked potatoes, milk, cream cheese, sour cream, parsley and garlic powder in a mixing bowl and mix with electric mixer until smooth.
Spoon into baking dish, cover and bake 30 to 40 minutes. Uncover and sprinkle with the cheese. Bake 5 - 10 minutes longer. Serve immediately.
Serves 10.
Very good with baked ham!
