  • chopped onion - 1 Tbsp
  • chopped parsley - 1 tsp
  • egg, lightly beaten - 1 item
  • leftover mashed potatoes - 2 c
  • little flour - 1 item
  • Crisco for pan frying - 1 item

How to make mashed potato cakes:

Combine potatoes, egg, onion and parsley. Shape into round cakes, about 3/4-inches thick. Roll in flour. Bake cakes on both sides until brown in hot Crisco. Very good.
