Ingredients/Components

  • sugar - 1 c
  • salt - 1 tsp
  • cider vinegar - 2/3 c
  • salad oil - 1/3 c
  • pepper - 1/2 tsp
  • wine vinegar - 1/8 c
  • stalks celery, sliced - 2 item
  • sliced onion - 1/2 c
  • sliced bell pepper - 1 item
  • or 6 zucchini - 5 item

How to make marinated zucchini:

Mix together the cider vinegar, wine vinegar, sugar, salt and pepper; bring to a boil. Boil for 1 minute. Cool and then add salad oil. Into a large glass bowl or casserole, slice the zucchini, celery and bell peppers. Separate the onion slices. Cover with sauce; put on cover and refrigerate overnight.
