Ingredients/Components

  • wine vinegar - 1/4 c
  • carrots, sliced - 4 item
  • fresh mushrooms, sliced - 1 c
  • envelope Italian salad dressing mix - 1 oz
  • cauliflowerets - 2 c
  • small zucchini, diagonally sliced - 2 item

How to make marinated vegetable salad:

Heat broth in saucepan. Add carrots and simmer 2 minutes; cool. Add remaining ingredients and chill several hours or more. Stir occasionally. Serve as an appetizer with wooden picks or to compliment a meal. Makes 12 (1/2 cup) servings. No fat.
