Marinated mushrooms



  • dash of salt - 1 item
  • olive oil - 3 Tbsp
  • chopped parsley - 1 tsp
  • tarragon vinegar - 1 Tbsp
  • small mushrooms - 1/2 lb
  • dash of freshly ground black pepper - 1 item
  • minced fresh or dried tarragon - 1/4 tsp
  • fresh endive leaves, washed - 1 item

How to make marinated mushrooms:

If mushrooms are not clean, gently rinse and dry on paper towels. Slice in half. In a bowl, combine other ingredients, except endive, and toss well with mushrooms. Let stand at room temperature for 1 to 2 hours.

To serve, place several endive leaves on plate; top with marinated mixture. Serves 2.
